2018/08/05: Canning Peaches is a great way to have fresh fruit all year round. In the past we always canned the Peaches in a Light-Medium Syrup (...Water to Sugar Ratio Here), but this year we tried a different route in order to more accurately take nutritional content: Hot Packing.

Results: Although not as sweet as peaches canned with a syrup, the peach flavor is very strong and tastes just as fresh as the day they were canned.
Main Nutrition:
7.75 Calories, 0.05g Fat, 0mg Cholesterol, 0mg Sodium, 1.89g Carbohydrates, 0.17g Protein.
Ingredients:
- 30 Peaches
- 6 tsp of Fruit Fresh
- 2 Gallons of Water
- 30 Peaches
- 6 tsp of Fruit Fresh

Directions:

1. Scald the Peaches then soak them in a cold water.
2. Peel the Peaches and cut into 1/8ths.
3. Boil the water and add the Fruit Fresh.

9. Remove the Jars and allow to cool before moving/storing.

Standard Serving Size
- Raw Medium Peach - 2-2/3" dia, 150 grams:
58 Calories, 0.38g Fat, 0mg Cholesterol, 0mg Sodium, 14.31g Carbohydrates, 1.36g Protein.
- Fruit Fresh (1/4 tsp):
5 Calories, 0g Fat, 0mg Cholesterol, 0mg Sodium, 1g Carbohydrates, 0g Protein.
6 tsp of Fruit Fresh was added to the water used to boil and Hot Pack the Peaches. We canned 12 Pint Jars and each jar contained 2-1/2 Peaches. This worked out to be 1/2 tsp of Fruit Fresh per Pint Jar and 20, 1/8th Slices of Peach.

Divided the Fruit Fresh per Pint Jar (1/2 tsp) by the Peach Slice Contents (20)
- Fruit Fresh (per 1/8 of Peach):
0.5 Calories, 0g Fat, 0mg Cholesterol, 0mg Sodium, 0.1g Carbohydrates, 0g Protein.
